Rava Kesari...Mouth watering sweet. Step-by-step

Rava kesari is a common sweet and easy to make. If  water,sugar  is not proportionate to rava , it might turn into night mare. Follow this step  by step and enjoy the rich sweet. I ngredients  Rava (sooji small) 100 g Sugar 150g Cashew nuts,raisins  as desired Ghee 100g Elaichi powder a pinch Food colour as desired. Serves 4 Preparation time 20 mins Preparation.  Heat a heavy bottomed pan with 75 g ghee. Once it melts add cashews. When it turn brown, add raisins.  When raisins balloons separate from ghee  and set aside. In the remaining ghee in the pan , add rava and start roasting. In another Stove boil 200 ml water. when it is about to boil, add food colour. keep roasting the rava until ghee is fully absorbed by rava. You can keep roasting till the water bubbles  in another Stove Once water bubbles add water little by little to roasted rava and  stir continously 

Dal curry/Araithakalar.....Crispy protein rich vegetable fry.

This is a protein rich vegetable fry. It is very delicious and rich item, usually a must item in wedding menu. We can try beans,plantain flower, cabbage, carrot,cluster beans for this vegetable fry. If we soak the dal and precooked vegetable is available, we can prepare this dish within 10 mins Let's see the ingredients  Chopped beans 100g Channa dal 3 table spoon Thoor dal 2 table spoon Red chilli 3 Salt to taste Turmeric powder 1 pinch Oil for cooking For saute Urud dal 1tsp Mustard seed 1tsp Asafoetida 1 pinch cumin seed 1 tsp Curry leaves. Preparation  Soak channa dal ,Thoor dal,chilli for 30 mins Pre cook beans with little salt. Grind the soaked dal and chilli with required salt and a pinch of turmeric to coarse. (Don't add water or don't grind to paste) Preparation  Heat 1 tsp oil in a pan. (Usually iron pan is used for this menu) Once it is hot add Mustard seed, urud dal, Asafoetida  one by one.

Coconut thogayal/Thenga thogayal ....light for tummy good for health.

It is a very light dish .Its main ingredient is urud dal which is rich in protein.  After a heavy meal or if you want to give rest to your stomach, you can try this menu. It is very easy to prepare and delicious also. Let's see its ingredients.  Urud dal 3 table spoon Pepper 1 table spoon Mustard seeds 1 tsp Salt to taste Asafoetida  Red chilli 3 Cooking oil 1 tsp Grated coconut 1/2 cup Tamarind small amla size. Preparation time 10 mins Serves 4 Preparation  Heat a pan with oil Once it is hot add Asafoetida, Mustard seeds and allow to pop. Add chilli and saute till brown. Add urud dal,pepper saute till golden brown  Transfer to plate and allow to cool First grind urud dal,chilli,pepper,Asafoetida to coarse powder in mixie. It will be handy if we prepare masala at correct propotion ready in our kitchen during morning chores. It is a basic masala yet the veggie fry will be crispy and tasty. Let's see the ingredients  coriender seeds 1 cup(100g) Channa dal 1/2 cup(50g) Urud dal 1/4 cup (25 g) Peanut 1/2 cup (50g) Asafoetida 1 small piece Cumin seed 1 tsp Pepper 2 tsp Fenu Greek 2 tsp Salt 1 pinch Turmeric powder 1 tsp Red chilli 10 to 15 (I have added few kashmiri chilli for colour) Let's see its preparation  Heat a heavy bottomed pan Add Asafoetida  Once it balloons add Corriender seed and saute till it pops and set aside. Add urud dal,channa dal and saute till golden brown and set aside Add peanut and saute till golden brown and set aside.
