Avial!! Mixed veggies gravy!

 

Avial is a traditional south-Indian dish prepared differently in each state
I am going to prepare a basic yet delicious version which can be altered according to once taste
Usually county vegetables are used Strictly no onion or garlic
Usually prepared during festival and marriage which completes the feast
It can be prepared on regular days with little left-over vegetables to make the day grand

Ingredients

Red pumpkin
White pumpkin
Carrot
Beans
Potato
Sweet Potato
Yam
Cluster beans
Peas
All vegetables are chopped in the same size and same quantity
Any type of sprout
(You can use drumstick chow-chow colacasia  snake guard raw-banana 
                                                            OR
You can leave some vegetables as per your choice)


Coconut  1\2 cup (Grated)
Green chili 2-3 (According to one's spice need)
Geera-2 tsp
Ginger- A small piece
Curd-1 cup
Coconut oil- 4 tbsp
Curry leaves-1 arc
Salt to taste 


Preparation time-15 mins
Serves-4
Pre-preparation
Add grated coconut, 1 tsp geera, chili, ginger to a mixer and grind to fine thick paste by adding little curd 


Heat a pan or kadai. Add 2 tbsp of coconut oil, add 1 tsp of geera curry leaves


Add vegetables and saute in the oil for 2 mins so that oil is coated evenly on all pieces

Add salt mix well and close the pan with the lid till all vegetables are cooked finely

Make sure that the vegetables are not over-cooked or mushy 
Add grinded paste,mix well

Add curd and bring it to froth. Pour 2 tbsp of coconut oil on top and turn off the flame and cover it with lid.Now Avaial is ready to be served 

It goes very well with Adai and puliodarai
