Spicy yummy Brinjal rice/kathrikai sadam...within 20 mins


Brinjal rice /Katirikai sadham is a variety rice. 
It is rich is iron and tastes extremely yummy and easy to prepare.Lets see how it is prepared.
 
Ingredients 
Brinjal 5 nos
Tomato 2 nos
Tamarind small lemon size
Dhaniya 2 tablespoon
Turmeric powder  1tsp
Channadal 2 tablespoon
Urud dal 2 table spoon 
Clove 5 nos
Fenugreek 1 tsp
Pepper 1 tsp
Red chilli 10 nos
Cumin seeds 1 tsp
Groundnut seeds 1 handful
Mustard seeds 1tsp
Asafoetida 1 pinch
Gingilley oil 2table spoon
Ghee 2 table spoon
Curry leaves 
Corriender leaves for garnishing 
Raw rice 250 g (1 cup)
Grated coconut 1 cup
Salt to taste



Preparation time 20mins
Serves 5 people
Chop brinjal and tomato into cubes and set aside
Dry roast Dhaniya,channa dal, urud dal and allow it to cool.
In medium flame dry roast pepper, fenugreek,dry chilli, cumin seeds and allow to cool
Dry roast coconut to golden colour in low flame and rest it to cool.
Soak tamarind in warm water and extract thick tamarind extract.
Once all the dry ingredients are cool,grind it into coarse powder

We are going to use only 3 table spoon of it in this menu.You can either adjust the ingredients according to your need or you can use this powder while roasting /fry  other vegetables.
After washing rice ,soak it for 10 mins
Heat a heavy bottom pan.Add oil and ghee.
Once it is hot,add mustard seeds,channa dal (1 tsp),urud dal(1 tsp) ,ground nut ,Curry leaves, Asafoetida one by one.
Once Mustard seed is popped ,and dals turn brown add tomato and saute for a minute. Once mashed add brinjal, saute for 2 mins ,close and cook for a minute.Add tamarind extract,turmeric and 3 table spoon grinded powder and bring to boil. 
Add rice mix well. Add 2 cups water and salt to taste.
cover it will a lid and cook in medium flame for 10 mins. After 10 mins ,the water will be absorbed and rice will be cooked well.(if not, cook for 2 mins and check again. The time may vary depending on the thickness of the pan, and the weight of ingredients)
Garnish with coriender leaves cover again and allow to set for 5 mins.
serve hot with raitha or vadam.
